Dry okra subji

Heat a pan on medium heat and add olive oil. Once the pan is hot, add the chopped frozen okra, about 2 handfulls. Let it soften for 2 minutes.

Add a little turmeric and cumin powder. Add twice as much coriander powder. Add salt to taste. Mix it up. Gently move the okra around for 2 minutes. You'll notice them becoming sticky.

Add in dried mango powder. The sourness from it helps avoid the okras lumping together. You should see a red color as the dried mango powder cooks. Turn the heat up to max. Okra tastes great when it's crisp on the outside. Remember to keep moving them around to avoid burning. We are done when you feel the okras are crisp enough. Serve with parathas.
